Over the past few months, our customers may have realized there has been something different about the Windlass, in a good way! From new and exciting dishes to the positive atmosphere he brings inside the kitchen that carries over to our guests, we couldn’t be more excited to officially announce the appointment of Eduardo “Eddie” Santos as new Executive Chef at the Windlass
Chef Eduardo “Eddie” Santos has more than 40 years of experience in the culinary arts. He started from an early age where he quickly realized his love of the gourmet world from his grandmother. Eddie opened his own restaurant in1993, The Ridgewood which he operated for over 20 years and became a staple in the community, donating his time and resources to seniors and children alike out of the kindness of his heart.
After operating his own establishment, he went on to assist The Windlass with the initial grand re-opening in 2015, where he created a delicious menu with efficient and consistent techniques. After many years, Eddie went on to further challenge and build his techniques by completing other restaurant openings around New Jersey & Portugal.
However, Eddie's love for the lake & community has brought him back to The Windlass, where he has deliciously recreated and completed what he started.
